How long can I keep it in water?

Without getting into too much details, let's say I know a spot where I can leave my Yamaha AR190 without getting into trouble. Is this going to be a problem or I'm worrying too much?

It depends entirely on the spot you're thinking of.
Generally, if it's a private dock or an approved mooring, you're probably fine.
If it's something like a public beach, a restricted area, or blocking navigation, then yes, it could definitely be a problem.
It's best to check with local regulations to avoid fines or worse, getting your boat impounded!

bro, Even in freshwater, parts like the jet pump components, trim tabs, and any underwater metals are susceptible to corrosion over time. In saltwater, it's much faster

If it's a good hiding spot you probably won't have any legal issues. With that said, too long in the water might cause problems. I don't think it would be a massive problem for a few days, but longer than that and I'd consider taking it out. You could wax the hull and check the anodes just in case to reduce any potential for damage.
